Sauteed Salmon

Now this combination came to me on a whim. And it doesn’t hurt that I was in the mood for another type of fish than fried. For the first time in all my salmon eating years, I noticed a recipe on the back of the frozen salmon pack……mmmmm…..that looks pretty good! Lets give it a whirl.

Directions for salmon:1 lb salmon, 1/3 cup soy sauce, 1 tbsp. brown sugar, 2tbsp minced fresh ginger, 2 cloves of garlic, 1/2 tsp cayenne, 1/2 cup rice wine or chicken broth, 1/2 cup sesameseeds, mix and marinade for 15 minutes.

My recipe for salmon:

  • 8 pieces of frozen salmon
  • about 2 tbsp. brown sugar
  • 2 tbsp. ginger from the squeeze jar
  • 1 spoonful of garlic, the minced kind in the jar
  • white wine vinegar
  • a light sprinkle of salt
  • about 3 tbsp. of oyster sauce
  • olive oil for sautéing

Thaw salmon. Ya’ll already know what’s coming next! Marinade!Let this marinade for 2 hours in frig

For stir fried veggies:

  • 1 head of cauliflower
  • 1 red pepper
  • 1 medium onion
  • 1/3 bag shredded carrots
  • 1 bunch of broccoli
  • 2 packs of Kikkoman fried rice seasoning
  • 1 empty seasoning pack full of water
  • 2 tbsp. sesame oil
  • 1 tbsp. soy sauce

Cut up all the veggies. Rinse really well.

For rice:

  • 1 box of cooked couple day old Spanish rice
  • 1/4 roll of beef chorizo
  • 1/2 cup chopped green onions
  • 2 eggs
  • 1 pack of Kikkoman fried rice seasoning
  • 1 empty seasoning pack full of water

Ok! First, chop veggies and rinse them.

Put olive oil in pan and let that heat up on medium heat. Place salmon in pan. do not cover.

Cook beef chorizo in pan on medium heat. This will not take long, I added a little bit of sesame oil to the pan also

In my wok, I added sesame oil, seasoning, water, soy sauce, and all the veggies over 350 degrees heat. Give it a good stir. Do not cover.food 003

Add rice and green onions to beef choziro. Stir this constantly to prevent rice from sticking.food 002

Go back and stir your veggies.

Add seasoning and water to rice. Stir as the rice absorbs the liquid. Push rice to the side and add 2 eggs. Scrape bottom of the pan like you are making scrambled eggs. Mix into rice. Turn off.

Your veggies and salmon should be ready. Plate and servefood 007Bo wanted “juice” from the veggies on his.

Bo said this was the best rice he ever had! It’s about gone now and I thought I had made enough for 2 days. Memee Loved the veggies. Those are about gone to. Fat’s plate was gone without complaints. The salmon was different but me and boys still liked it. It had great flavor and not at all fishy like salmon can be sometimes.

I rely on them to tell me if a new seasoning is good or not. I taught them a long time ago. If you don’t say you don’t like it, then I’ll keep making it for you! lol

This meal was great and a must try for a nice change of pace
