Lemony Lemon Brownies

My mom gave me this recipe, she found it online but can’t remember exactly where,
You will need:
- 3/4 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/4 teaspoon salt (sea salt)
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 tbs lemon zest
- 2 tbs lemon juice
For tart lemon glaze:
- 4 tbs lemon juice
- 8 tsp lemon zest
- 1 cup sugar icing
(FYI: I tripled the recipe)
Grease an 8×8 inch baking dish with butter and set aside.
Zest and juice two lemons and set aside
In the bowl of an electric mixture fitted with the paddle attachment, (we just used a regular mixer) beat the flour, sugar, salt, and softened butter until combined
In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined
Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy
Pour into baking dish and bake for 23-25 minutes, the brownie should be golden around the edges. Do not over bake or the bars will be dry
Allow to cool completely before glazing. Spread glaze over the brownie with a rubber spatula and let glaze set
cut into bars and serve
Now I thought I would love these brownies, just because of the lemon but these turned out not to be my fav. I did forget to make the frosting like the instructions said and ended up justĀ frosting them. My issue was the brownie itself, not sweet and to much zest. My daughter enjoyed them. My boys didn’t rave about them. I may work with a smaller batch to improve this recipe some.
