Steak Tacos

Ok everybody…….. I know, I know, tacos back to back? but these do a whole 360!

Go get you some ribeye steak, I found some marked down and since I look when I am cooking that day, then It is just fine.

You will need:

  • 2 nice size thick cut ribeye steak
  • 3 packs of fajita seasonings
  • 1 head of romaine lettuce
  • 2 chopped tomatoes
  • 1 medium white onion, very coarsely chopped
  • if you want leftover Mexican cheese from fish tacos 😉
  • leftover salsa from fish taco s:)
  • fresh cilantro
  • 1 tbs olive oil
  • soft tacos shells

Trim most of the fat from ribeye, slice diagonally into medium size pieces, not to small. Put olive oil, steak and onion in skillet. Add 1 pack of fajita seasoning.  Cook on medium low. Once steak is ALMOST done cooking to you liking, add 1 cup of water and 2 packs of fajita mix. Stir. Bring to boil, turn off. let sit about 5-7 minutes.

Chop lettuce and tomatoes. Pick off some of the cilantro leaves. Wash/rinse really well.

Once done, pile  steak, onions, lettuce, tomatoes in shell, top with cilantro. and whatever you like.

Serve with Doritos.

Of course, my steak lover was ecstatic! He walked in from football practice and said What! tacos with steak in them? I’m ready to eat right now”
