Pizza! Pizza! Pizza!

lol, ok, after heavy eating throughout the holiday weekend , my meals have been simple and pretty light. Who doesn’t love pizza night? My family does so this was right up our alley. This is 3 recipes in one, so follow carefully. This was also my first attempt at deep dish pizza so I was very nervous.
For veggie deep dish pizza, you will need:
- 1 medium green bell pepper
- 8 oz fresh baby portabella mushrooms
- a handful of spinach
- 2 tbsp. olive oil
- a sprinkle of seasoned salt and black peeper to taste
- about 5 oz shredded whole milk mozzarella
- about 1- 1 1/2 cups of bertoli pasta sauce
- 1 Pillsbury pizza dough roll
For the spinach and tomato deep dish pizza, you will need:
- 5 oz fresh spinach
- 1 tomato diced
- about 6 oz of shredded whole milk mozzarella cheese
- about 1- 1 1/2 cups bertoli pasta sauce
- 10 pieces of turkey pepperoni
- 1 Pillsbury pizza dough roll
For turkey pepperoni and spinach thin crust pizza, you will need:
- 1 pack turkey pepperoni
- handful of spinach
- about 6 oz of shredded whole milk mozzarella cheese
- 1 thin crust Pillsbury pizza dough
(the cheese I bought were 2 16 oz blocks)
OK, lets get started.
you will need 2 cake or pie glass, 8-9 inch cookware for the deep dish pizzas and a cookie sheet for the thin crust
preheat oven according to directions on the back of the dough.
unroll dough and mash it into cake pans, then poke holes in the bottom with a fork. do not mash the thin crust, just unroll and pull it until it is to your liking
chop green pepper, then cook it with olive oil, mushrooms, and dash of seasoned salt over medium heat.
precook dough according to directions, about 5-8 minutes
shred cheese while you wait on the dough to precook
take out the dough and set to the side
cook spinach until just wilted, constantly stirring, remove from hot pan(check veggies they should be about done)
spread pasta sauce on top of dough
FOR DEEP DISHES:
For mushroom and veggie pizza: after pasta sauce, add cheese, 1/2 of mushroom and green pepper mix, pasta sauce again in dollops, light cheese, veggies, a little spinach, then cheese, top with Italian seasoning
For spinach and tomato, follow the same steps, just add turkey pepperoni,
spinach and tomato

slice of spinach and tomato, it held together well
cook about 15-20 minutes, if you want the top browned, broil on high for 1-2 minutes

cook thin crust about 10-15 minutes
all done! serve like it is, no side salad needed because all the veggies are right in the pizza, and my family adores spinach. Me-mee loved her veggie pizza, no complaints from the boys. not expected, its pizza. Now my fiancée is not a veggie lover at all, he ate 1 piece. I will continue my attempts to sneak veggies in his life
In my opinion, the crust could use a little flavor, maybe a little butter, a touch of pesto…..oh! tomato pesto! brainstorm in progress. That freshly shredded cheese was amazing!
