Chicken Parmesan

While I am on my kick of all meat besides beef. I had a taste for spaghetti and what better dish than chicken par?

This recipe includes lots of pics and a nice breakdown of how to make this dish because this is a simple tasteful dish that anyone can make.

You will need:

  • 4 chicken breasts
  • 3 tbsp. Italian seasoning
  • 1 tbsp. seasoned salt
  • 1/4 cup olive oil
  • 1 box of spaghetti noodles(2 tbsp. white salt for water)
  • 1 1/2 tbsp. traditional pesto
  • canola oil for frying
  • 1 1/2 cups flour
  • 2 eggs
  • 1 cup Italian blend cheese

To start season chicken breasts with 1 tbsp seasoned salt and 1 tbsp Italian seasoning, add olive oil. (I let my sit for 4 hours but you don’t have to)

Start water for spaghetti (follow directions on the pack of spaghetti)  and add salt to the water (about 2 tbsp). While waiting for the water to boil.

Pour  1/2 inch deep canola oil into a frying pan, turn on medium.chicken par 003 While waiting.

Double bag a plastic grocery store bag and put flour, 1 tbsp Italian seasoning, and 1/2 tbsp seasoned salt into bag. Shake well.

Next break eggs right into bowl with the seasoned chickenchicken par 001use your hands to beat eggs

Place all 4 breasts into bag of flour. Shake making sure chicken is covered good

Shake off excess flour and return chicken to eggschicken par 002cover each piece of chicken with egg

Return chicken to flour and shake to cover chicken again.chicken par 004This creates an extra crispy crust,                                                                                                                        Nice double breaded  crust:)

TIP: your water should be boiling now for the noodles. Place in water and turn down to medium. remember to watch

TIP: you can check for the correct temperature of the oil by wetting you hand and flicking water into the grease, if the water dances fast and the sound is fast it is ready. Please be sure no pets and children are near when doing this!

Chicken breast cooks pretty quickly so about 6-8 minutes per side.chicken par 008

Once you spaghetti is done, add 1 1/2 tbsp traditional pestochicken par 011chicken par 009

add olive oil and 1/4 cup parsley. Toss.

Put cheese on top on finished chicken and broil for 1-2 minutes. Nice and brown.

Pesto is that special thing no household should be without……as a matter of fact that prompted me to make a page for essential, flavorful must haves for every household. Back on subject, for those that have never had it, it  is a versatile sandwich spread, a pinch in tuna salad gives tuna a flair, and homemade pizza and garlic bread can benefit from pesto also. The possibilities are endless!

No spaghetti was left, my daughter got to enjoy some also because the meat wasn’t mixed in. and the next day everybody wanted more sooooooooo I will be doing the same spaghetti tonight only with meat sauce “on the side”
