Sunday dinner

I needed to come up with a 1 hour Sunday dinner. So here goes!

For ribs you will need:

  • 4 slabs of beef ribs
  • 1/4 cup of olive oil
  • about 1/4 cup of Worcestershire sauce
  • lightly sprinkle steak seasoning on the meaty side of the ribs

For potatoes:

  • 5 medium potatoes, peeled and sliced as thin as possible but not so thin that they turn to mush
  • 1 cup of milk with 2 tbs cornstarch dissolved into it
  • 2 tsp seasoned salt
  • dash of pepper and dash of oregano
  • 8 oz of shredded Colby jack

For greenbeans:

  • 2 lb bag of fresh string beans
  • 1 small onion
  • seasoned salt
  • course white salt
  • liquid smoke
  • 1 tab of butter
  • 1/8 cup olive oil

Season meat, cover, place in frig. Preheat oven to 450.

Prepare your grill. While the coals are getting ready, peel and slice potatoes. check grill, if ready put the ribs on.

Chop onion, sautéed with olive oil, butter, and a little seasoned salt.

Place potatoes in 8×8 baking pan. pour milk, and seasoning over potatoes. Top with shredded cheese. Cover tightly. Cook about 45 min or until soft.

While potatoes are cooking, if the ribs are not on, go ahead and place those on grill. Put top on grill and make sure the air vents have just a little circulation.

The onions for the green beans should be ready now, pour 2 cups of water, about 1-2 tsps. course salt, and about 10 shakes of liquid smoke. Cover tightly, bring to boil. Turn down to low.

wait…wait…wait…check ribs while you wait. I don’t like barbeque sauce on mine, but if you are adding sauce to the ribs, add it about 10-15 before they are done.

Everything should be getting done right around the same time. Serve with ice cold Pepsi
