Cornflake-Crusted Flounder

I wanted something different from regular fried fish and I remembered my mom used to make cornflake “oven-baked” chicken when I was kid. So I said why not try it with fish?
You will need:
- 2 lbs of frozen flounder or some type of mild fish
- 4 cups of cornflakes
- 2 eggs
- 1/2 tbsp. “Slap Yo Mama” Cajun seasoning
this was my 1st time trying this type of Cajun seasoning, it is not spicy at all(which is why I bought it), but seems saltier then the kind I normally use, I reduced the salt for the recipe from what I originally used
- 1 tbsp. melted butter
For rice you will need:
- 4 cups water
- 2 cups jasmine rice
- 1 small pinch of saffron threads
- 1 tbsp. parsley
Preheat oven to 425
Spray cooking spray on a large cookie sheet
Thaw fish, pat dry with a paper towel.
Break eggs in a small bowel and beat them like you are about to make scrambled eggs.
Put the 4 cups of cornflakes in a double bagged plastic grocery bag.
Sprinkle Cajun seasoning on fish
Dip fish into eggs, let excess egg run off
Put fish in bag with cornflakes and SHAKE
Place fish on cookie sheet
Continue until all fish is covered
Put any leftover cornflakes on top of the fish
Melt butter and pour it over places that you added the leftover cornflakes
Bake for 20-25 minutes or until fish is flaky
While fish is cooking
Add saffron and parsley to water, add 1 tsp salt and 1 tbsp. butter if desired
Bring the 4 cups of rice to a boil
Add rice, and turn down to low
Cook for 20 min or until rice is tender
Everything will be down around the same time, my boys were impressed that it was cereal on their fish and loved it. Fat even decided to take some for his lunch the next day. When I walked downstairs, he had everything set out and was attempting to prepare his lunch! My fiancée, of course, liked it because it was not to fancy.
I would like to try it with chicken next time
