Meatless Lasagna

This is Memee dish. I really like when I can still cook for her. Sometimes she is stuck with morning star meals, but some of them are actually pretty good.

You will need:

  • 3 1/2 cups tomato sauce
  • 7 noodles
  • 1 cup shredded sharp cheddar
  • 2 cups of mozzarella
  • 1 cup of Italian cheese blend

Use about an 7×7 glass pan I have a small one that I believe I must have borrowed from my mom years ago. It works great for smaller portions.

Lets layer.

  1. 1/4 cup diced tomatoes in the bottom of the pan
  2. 1/2 cup pasta sauce
  3. 2 noodles to fit
  4. layer ricotta
  5. 1/2 cup sharp cheddar
  6. 1/2 cup mozzarella
  7. 1 1/2 cup pasta sauce
  8. 3 noodles to fit
  9. layer ricotta
  10. 1/2 cup sharp cheddar
  11. 1/2 cup mozzarella
  12. 1 1/2 cup pasta sauce
  13. 2 noodles to fit
  14. layer ricotta
  15. 1 cup Italian blend
  16. 1 cup  mozzarella

Cover tightly. Cook on 450 for 20-30 or until noodles are tender.

This gave her enough to take to school for lunch. Regular high school lunch is very limiting for her. The Norfolk technical center she attends a couple days a week does have a salad bar so that is a huge convenience for us.
