Meatless Lasagna

This is Memee dish. I really like when I can still cook for her. Sometimes she is stuck with morning star meals, but some of them are actually pretty good.
You will need:
- 3 1/2 cups tomato sauce
- 7 noodles
- 1 cup shredded sharp cheddar
- 2 cups of mozzarella
- 1 cup of Italian cheese blend
Use about an 7×7 glass pan I have a small one that I believe I must have borrowed from my mom years ago. It works great for smaller portions.
Lets layer.
- 1/4 cup diced tomatoes in the bottom of the pan
- 1/2 cup pasta sauce
- 2 noodles to fit
- layer ricotta
- 1/2 cup sharp cheddar
- 1/2 cup mozzarella
- 1 1/2 cup pasta sauce
- 3 noodles to fit
- layer ricotta
- 1/2 cup sharp cheddar
- 1/2 cup mozzarella
- 1 1/2 cup pasta sauce
- 2 noodles to fit
- layer ricotta
- 1 cup Italian blend
- 1 cup mozzarella
Cover tightly. Cook on 450 for 20-30 or until noodles are tender.
This gave her enough to take to school for lunch. Regular high school lunch is very limiting for her. The Norfolk technical center she attends a couple days a week does have a salad bar so that is a huge convenience for us.
