Tilapia tacos

I love fish and so does my children. I keep tilapia in my freezer because its so versatile. It really takes on the flavor of what ever seasoning you are cooking it with. My latest brainstorm was fish tacos. You will need to thaw out the fish first so set them out at least an hour beforehand.
You will need:
- about 10 tilapia fillets, thawed
- 2 packs of taco seasoning
- salsa, we use chunky salsa
- chopped tomatoes
- torn up lettuce
- 1 box of Spanish rice
- 1 box of stand and stuff tacos, 1 box of soft tacos
- Mexican shredded cheese
- 2 tbs olive oil
Add 2 tbs olive oil to nonstick pan, Just dump the fish into the pan also. As the fish cooks ( medium heat) you can break it apart then with spoon/ spatula.
Tilapia does not take long to cook, so within 20 min, it will be done.
Add taco seasoning packs and just a LITTLE bit of water, just enough to help dissolve the seasoning.
This was my first time trying stand and stuff shells, and I absolutely love them! Easy to work with.
Layer starting with fish, cheese, tomatoes, lettuce and top with salsa. Simple, fast, and good!
This will be a new fav, Bo and Fat were unsure at first they enjoyed them.
I did make some Spanish rice but I forget to serve it.
