Smoked Gouda Potato Soup

I was visiting my sister when  I just happened to see this recipe book from Crockpot. It says recipes for your 7 quart Crockpot.

The recipe calls for:

  • 9 medium Yukon gold potatoes, peeled and cubed about 6 cups (I used red potatoes)
  • 2 cans (about 14 oz each) chicken broth ( I used veggie broth)
  • 1/2 cup water
  • 1 small red onion, finely chopped (I used a yellow onion)
  • 5 oz of baby spinach (spinach comes in 8 oz bags, so used all 8 oz)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4  tsp red pepper
  • 2 1/2 cups shredded smoked Gouda cheese, divided ( I used .70 of a lb of gouda)
  • 1 can (12 oz) evaporated milk
  • 1 tbs olive oil (I didn’t use)
  • 4 cloves of garlic, cut into thin slices(I used minced garlic)
  • 5-7 sprigs of parsley(I used parsley from the jar)

Crockpot directions are:

Combine potatoes, broth, water, onion, spinach, salt, red pepper, black pepper in Crockpot slow cooker.

Cover and cook on LOW for 10 hrs or until potatoes are tender.

Slightly mash potatoes, add 2 cups of gouda and evaporated milk.

Cover and cook on HIGH 15-20 min oruntil cheese is melted

HEAT oil in small skillet over low heat unti hot. cook and stir garlic until golden brown, set aside. Pour soup into bowl.  Sprinkle 2-3 tsp of remaining cheese in each bowl. Place spoonfuls of garlic in the center of each bowl. Sprinkle with parsley.

MY GREAT VARIATION, a must try:

I wanted to simplify the recipe a little so,

To start I only put potatoes, broth, and seasonings in crockpot.

After about 5 hours, I added spinach, milk, gouda, parsley, garlic, and 2 tbs of butter ( I actually bought fat=free evaporated milk so the butter made up for some fat)chicken and soup 006

I didn’t mash the potatoes either

I let this cook until cheese melted, I did not shred my cheese its to much work.

Once everything blended in good, it was time to eat!

My boys were gone so my daughter and I sampled it. This soup is the GREASTEST!!! I took some to my sister and she ate her whole bowl and wasn’t even hungry 🙂

The next day only a little bit was left. It’s enough for the boys to try when they get home today. I will  update when they do
