McCormick Chili

This recipe is my annual Halloween dinner. After running around on Halloween, the last thing I want to do I stand on over a stove. The crockpot has become my best friend. This is another super simple recipe with some slight variations too add flavor. The seasoning pack can be found in any major grocery store.

The directions on the back of the pack calls for:

  • 1 lb ground beef
  • 2 cans of kidney beans, drained
  • 2 cans of diced tomatoes
  • 1 can of tomato sauce

For variation, I use about 1.5 packs (remember I have to make Memee her vegetarian version), 1 lb of 93/7 ground beef, 1 roll of beef chorizo, 1 diced yellow onion

*chorizo can be a tad bit spicy

To start, dice onion and place in a medium pan over medium heat. Add ground beef and chorizo. Cook until ground beef is no longer pink. Chorizo cooks pretty quickly, so don’t worry about that. Do not drain fat.

In crockpot, Add meat and onion mixture to the all the above listed ingredients. Turn on shortest time. Hopefully yours has a keep warm setting.

Serving suggestions:cornbread, any firm bread, shredded cheese, over rice to make it less spicy and a true stretch meal.

After trick-or-treating, this feed my whole family, my sister and her 2 children and my mom. We all loved it and ate it plain. It was to spicy for my niece that’s 2.
