Fillo with Smoked Spinach

Ok, this turned out to be one of my “look and see what I have in the ‘frig” recipes.

You will need:

  • 1     10oz box of frozen spinach
  • 6 handfuls kale, stems removed
  • 1 box fillo dough
  • 2 slices muenster cheese
  • 3 slices sharp yellow cheddar
  • about 1/4 block of smoked cheddar
  • 2 oz cream cheese
  • 1/2 tsp garlic
  • 1 tsp seasoned salt
  • 1 tsp mrs. dash garlic and herb

Read instructions for fillo dough prior to beginning.

Be sure to rinse the kale really well.

Cook spinach, kale, seasoned salt, and mrs dash

in medium NONSTICK . saucepan until done.food and product 006

Turn heat down to low.

Add all the cheeses and garlic stir until blended infood and product 004food and product 005Cheese, cheese, & more cheese

Originally, I wanted little squares folded neatly like on the package.food and product 009note the little squares

This took to long for me, so I resorted to the cupcake method. I divided the dough in half then cut each half into 6 sections.

Scoop about2 spoonfuls into each cupcake

I had about a 1/4 sheet of fillo dough leftover,(I was done with the squares) so I melted butter and put cinnamon and sugar on the inside , then folded itfood and product 012like so. Looks huge! it really wasn’t

Bake according to fillo directions until brownfood and product 013Yay! all done & all were gone the next day

ALL 3 kids loved this recipe, and the sugar roll:)

 

Just a little info on this recipe,

-any cheese can be used

-the smoked cheddar dominated nicely ( I took a close up of that one)

-I learned fillo dough can be hard to work with, but worth it for the presentation
